Pekmez is a traditional Turkish food made by using different fruits, obtained after condensing juices.
It is most often made from grapes, but there are local forms of pekmez made from other materials including mulberries, plums, apples, pears, sugar beets, watermelon, sorghum and pomegranates. During recent years carob has also been used to make pekmez. In Southern Anatolia especially, the boiled ripe berries of a species of juniper known locally as andiz (Juniperus drupacea) yield sweet syrup known as andiz pekmezi. There is also another kind of Pekmez, made from carob, called keçiboynuzu pekmezi or harnup pekmezi in Turkish language. One of the most difficult to find is the tahini pekmez, made from sesame beans.
The highest quality of these is made in the regions of Zile, Kırşehir, Kastamonu, Sivrihisar, Balıkesir, Afyon, Kahramanmaraş, Gaziantep and Hatay.
Fruits reserved for production are squeezed by mortar or presser to produce grape juice. The juice is cooked at 50-60° Celsius for 10-15 minutes. A special kind of soil, used to purify the juice from particles, should be added to the juice while it is being cooked. Soil is also useful for balancing the taste. The Ministry of Agriculture in Turkey advises producers to use 1-5 kilograms of soil for 100 kilograms of grape juice.
Grape juice is stored in containers for 4-5 hours to ensure that all particles in the juice sink to the bottom. The limpid part of the juice is collected from the container and transferred to boilers for further heating. This boiling process gives pekmez its dark color and high viscosity. Pekmez has a dark color because of the caramelized sugar in the boiled grape juice. The juice loses its fluidity due to water loss by evaporation. Additionally, pekmez produces a special smell when prepared in cooking.
Before sugar became available, Turkish sweets were sweetened with pekmez or honey. For this reason, pekmez has been of the most important sweet foodstuffs in our traditional diet and tastes for millennia. Making Turkish black tea like the Turks To make the Turkish black tea like the Turks do you will need two kettles of different sizes: a big and a small one. The big kettle must be made of metal and the small one can be made of metal or ceramic. First fill with water the big kettle and place it at the stove. Then put the small kettle above the big kettle. At the small kettle put black tea (the measure of black tea is a dessert spoon for each person). Light the stove. While the water is boiling in the big kettle the second small kettle will also be warmed. Please notice that the small kettle contains only black tea and it does not contain water. After the water boiled, you should put this water on the small kettle where there you have the black tea. (The measure of the water is relative to the number of persons who will drink the tea. For example, if just two people wants to drink tea you should add a little bit of water, if there are more people you must put more water).Now you must wait 15 minutes more or less, this is necessary so that the tea can cook. You will see that after 15 minutes the tea stays in the bottom of the kettle, this means that the tea can be served. In Turkey black tea is generally not drink in mugs but in special glass cups as a Turkish tradition. There are two types of tea to be served: the strong tea "Koyu cay " and the light tea "acik cay". When serving the strong black tea you must fill two thirds of the mug with tea of the second kettle and add the boiling water to fill the rest of the mug. As the tea is strong the colour of this tea is dark brown. When serving the light black tea you must fill one third of the mug with tea of the second kettle and add the boiling water to fill rest of the mug. As the tea is light the colour is light brown. The Turkish cuisine is millenarian, as well as the Turkish alimentary habits. Turkish recepies passes from grandmother-mother-daughter since generations and they are very traditional in their diet habits. Turks doesn't like much to try different kinds of food.
Beginning with a very oriental breakfast.... bread, olives, tomatos, cucumberes, white cheese, honey and black turkish tea. At the weekend some families can add to the table: an omelet or boiled egg, borek (pie filled with vegetables, meat or cheese), sucuk or pastirma (Turkish salamis), butter or fresh cream, marmalades, etc...
The lunch is served between 12:00 and 13:00 in the normal work days . In big cities people do not go back home for lunch. There is usually restaurants in big companies. Meals are generally simple but Turkish cookery. At street restaurants you can see Turkish typical dishes that can be chosen at self-service restaurants without having to wait a long time to be served. We can separate the turkish dishes in 5 types: soups, cold dishes, hot dishes & meats (main dishes) and dessert. |

During the summer Turks eat a dish called cacik, which is a cold soup made of yogurt, cucumber and herbs.
The Turkish hot dishes (main dishes) usually have some meat on it and a lot of vegetables, however the Southwest population eats more meat. You can eat in Turkey fried eggplant with meat, spinach with yogurt, pepper filled with rice and milled meat covered with yogurt, etc... You will also be able to eat sis kebap in Turkey, that are small barbecues in wood stick (beef, sheep or chicken - due to religion you won't find pork in Turkish restaurants). The doner kebap (translated literally means beef that rotates - because beef is piled up and it rotates around itself when cooking) it is a good dish to ask for. You can eat it with french fries and salad, or you can eat the beef as sandwich. |

How to prepare Turkish coffee and how to read the coffee grounds
How to prepare Turkish coffee You will need a special pot (that is called "cevze" in Turkish) to prepare Turkish coffee, a very fine grinded coffee (ask at the shop to grind the coffee as fine as possible !) some coffee cups and sugar. Let's prepare 4 coffee cups of Turkish coffee. Add in the Turkish pot (“cevze”) two small coffee spoons for each cup of coffee, so for our 4 cups of coffee you will need to add 8 spoons of coffee. Fill one coffee cup with cold water and add it to the pot (for our 4 cups you will need to add 4 cups of cold water). So generally for each coffee cup you will need a cup of water.If you ask for Turkish coffee in Turkey, the waiter will ask you if you want your coffee "sade" (without sugar) "az sekerli" (with a little bit of sugar) or "sekerli" (with more sugar). So according to your taste you will add sugar to the coffee as you prepare it. The normal amount would be 2 small coffee spoons of sugar for each cup of coffee. So you added : water, coffee and sugar to your Turkish pot “cevze”. Cook the coffee until it boils. Remove the pot from the fire, mix it and return it again so it boils a second time. Watch out because the coffee can pour over your stove ! The good Turkish coffee is the one that gives foam !Add the coffee into the coffee cups and serve. As the Turkish coffee contains grounds of coffee, you should drink it very slowly, appreciating the flavor as the coffee ground settle down at the bottom of the cup. A frequent question is: “When should I stop drinking the coffee ?” You should drink the coffee until you fell the coffee ground on your mouth. As the coffee ground is heavier then the liquid it will settle down at the bottom of the cup. As soon as you finish drinking the coffee you can begin the “ceremony” of reading the Coffee grounds ! |
How to read the coffee grounds !
I will explain in a few lines how to read the coffee grounds. There are "experts" in reading coffee grounds and there are also books about it ! My explanation is a very basic one for beginners ! The Chinese were the first to read the future on the tea grounds, after it the Arabs started reading the future it a the coffee grounds. Today it is very common to read the coffee grounds in the Middle East.
The person that drank (Figure 1) the coffee should make the following procedure:(Note that this procedure can not be done by another person!) she should remove the saucer and put it up side down over the coffee cup as it is shown on the animation (figure 2). Then she should make some (2 or 3) small circular movements with the coffee cup and the saucer over it (Figure 3). After doing it, she should turn the saucer and cup all together up side down ( Figure 4). Some people believe that adding a coin on the top of the coffee cup would bring money to the person, so add one ! The coin will absorb the heat of the coffee cup. |
Now you should wait until that the cup of coffee cool down. If you look at the coffee cup before it cools down, the coffee grounds will slip away and you will not be able to read the coffee grounds properly. So be patient and wait !
The person who read the coffee ground should "open" the coffee cup (Figure 5). Turks says “open” as they take the coffee cup and start reading the coffee grounds. If the coffee cup stays a little bit tight together with the saucer that means good luck and fortune! Nice start ! The bottom of the coffee cup means your heart or your house. So if the coffee grounds stays at the bottom of the coffee cup, that means you have problems at home or your heart is broken... If the bottom is clean that means the opposite !Everything is white and clean !
You will see around the coffee cup a lot of different images were formed. Here you will need a bit of imagination to see those images ! There are also some persons who has the power of clairvoyance and can see more than others...
Each image has a meaning, if you see: fish (big luck - happiness or money), dog (fidelity), snake (betrayal), cat (selfishness) and so on! The most usual figure is the fish that is represented by the coffee grounds in a similar form of a fish ( round image as an oval form). So several symbols can be interpreted as: rings (marriage), children (births), bird (good news), etc... Notice that the drawing does not need to be very defined! It would look like a modern art work !
You will also notice that you might find long lines, each one of these lines symbolizes a person. If you have 4 lines, it means that 4 people are getting together. You will have to look and imagine... so you will read the coffee grounds.
After you read the coffee cup, you should get the saucer and pour the coffee grounds over the coffee cup(Figure 6). In the saucer you will also see some images that can be read. Turkish coffee is very common in Turkey, and it is also very common to see people reading each others friends' cup of coffee, this is a part of the Turkish culture! Turkey has a lot of very good belly dancers. You can find them everywhere: in nightclubs (where they have special belly dance shows for tourists), in parties ( such as weeding ceremonies; when the owner of the party hire the belly dance to amuse the party) and on television ( in TV programs where there is singers and entertainment). Belly dancers are a part of Turkeys culture. There are a lot of good belly dancers in Turkey, but among the best ones we would like to write about : Asena, Princess Banu, Nesrin Topkapi, Sibel Baris and Burcin Orhan. All these belly dancers became successful because of their dance, sensuality and beauty. |
Asena
Asena was born in Germany and went back to Turkey when she was 15 years old. She was a model and studied at marmara University. She played volleyball for a long time which gave her body strength. Then she found out the dance and the Asena belly dancer was born. Today she is one of the most famous belly dancer in Turkey. She has a special style and is very charming. She is usually also in television programs where she make some small presentations. She made an album with another famous singer in Turkey called Ibrahim Tatlises. She is one of the belly dancer stars in Turkey.

In the 80th's, one of the most beloved artists were Nesrin Topkapi. Nesrin was the first dancer to perform a show on Turkish TV at a time when belly dancing was banned. She started to teach and was popular with German students who visited Turkey. In the 90’s, Nesrin established a school of oriental dance in Germany.
Burcin Orhon
Burcin Orhon is one of the biggest stars of contemporary belly dance. She is the daughter of a famous Turkish composer. In her youth, Burcin studied ballet and tried out for the national ballet troupe of Turkey. She did not pass the try-outs and sought other means to dance professionally. When she tried oriental dance, she found success. Her ballet training is very prevalent in her dance, trading hip shimmies for highly extended kicks and very wide plie’s.

Tarkan es hoy uno de los grandes ídolos de la música pop turca en Turquía y internacionalmente. Él hay abierto el mercado de música en Turquía para un nuevo estilo de música. Su música es una mezcla de estilos orientales y ocidentales con la música pop. Su cuarto álbum hecho en 1999 y se llama "Tarkan" y contiene una colección de sus mejores musicas. Este álbum fue creado para conquistar los mercados internacionales sobre todo Europa, Asia, Estados Unidos y América Latina.
En 2001 hay hecho "Karma" un álbum que tebe éxito en Turquía y Europa.
El nuevo álbum de 2003 se llama "Dudu" y tiene 5 musicas y 5 remixes. Tarkan hay hecho también un tour en Turquía y varias presentaciones para la televisión Turca. Hoy Tarkan guardan adelante siendo un ídolo para los Turcos y sigue conquistando al público internacional.

Turkey is a secular country, that means religion and state are separated. What is valid for religion may not be valid for the state. Marriage is one of the points which religion and state think in a different way. The muslim religion accepts that a man can marry more than a woman. The Turkish civil code does not accept it, a man can marry just one woman.
A Turkish man can marry more than a woman if he regards just the muslim religion. He should provide all his wifes the same lifestyle and care. He can not marry more than a woman legally.
The majority of Turkish men are married just with one woman. There are cases which you can find a man living together with more than one wife but this is not common. Since the foundation of the Turkish republic by Ataturk the civil law has been changed and accepted by the population. |
If a man wants to marry a woman, both must prepare all documents to be approved and wait for the wedding day. Foreigners can marry a Turkish man or a woman and also gain a Turkish citizenship if they want and accept it.
Turkish people would rather marry in summer, spring or autumn, but almost never in winter. For the civil marriage there are special places all over the city. In those "marriage offices" in almost every 15 minutes there is a marriage. These places are usually big and located in central districts of the city. There is usually a big ballroom with a lot of chairs for the guests to sit down. In a stage there is a table with 5 chairs. The bride and groom sit together in a corner, two witness from the couple in another one and the judge of civil courts who will marry them in another one. So these 5 persons will be seen in the stage by the audience.
Turkish Gold Coins | The bride usually wears a white wedding gown and the groom usually wears a suit. The witnesses and guest are usually well dressed for the occasion. The ceremony is very simple: the judge asks the bride and groom's name, birthday date, place of birth and their father's name, after that he asks if the bride and groom accept to marry each other. After the "yes" there is usually a lot of applause from the audience which gets excited and happy about the event. So the ceremony ends the married couple will go out of the ballroom an the next couple will come in... it is unbelievable how many marriages they make pro day in some districts of Istanbul. Usually weekends are most requested days to get married. |
The bride and groom than moved to another room to be congratulated by family and guests. The family usually give as gifts: gold coins, gold jewelry and money as. Gold coins usually have a red ribbon and it is put with a pin over the bride's weeding dress. Money will be also added with a pin. At the end of the greetings the bride will be covered with gold, jewelry and money. The quantity of gold and money will depends on the family's wealthy. The bride usually caries a small bag where she can keep some of the gold, jewelry and money she received.
After the greetings there is usually a party where people will enjoy good food and music. Honeymoon is also an usual event and the bride and groom might go to a beautiful place to celebrate their marriage.

The Fast of Ramadan
The Fast of Ramadan Ramadan is not a fix holiday that changes its date every year and it is located in the ninth month of the Muslim calendar. The Month of Ramadan is also when it is believed the Holy Quran "was sent down from heaven, a guidance unto men, a declaration of direction, and a means of Salvation". It is during this month that Muslims fast. It is called the Fast of Ramadan and lasts the entire month. Ramadan is a time when Muslims concentrate on their faith and spend less time on the concerns of their everyday lives. It is a time of worship and contemplation. During the Fast of Ramadan strict restraints are placed on the daily lives of Muslims. They are not allowed to eat or drink during the daylight hours. Smoking and sexual relations are also forbidden during fasting. At the end of each day the fast is broken with prayer and a meal called the "iftar". In the evening following the iftar it is customary for Muslims to go out visiting family and friends. The fast is resumed the next morning. |
According to the Holy Quran: One may eat and drink at any time during the night "until you can plainly distinguish a white thread from a black thread by the daylight: then keep the fast until night".
The good that is acquired through the fast can be destroyed by five things: the telling of a lie, slander, denouncing someone behind his back, a false oath, greed or covetousness. These are considered offensive at all times, but are most offensive during the Fast of Ramadan.
During Ramadan, it is common for Muslims to go to the Mosque and spend several hours praying and studying the Quran. In addition to the five daily prayers, during Ramadan Muslims recite a special prayer called the Taraweeh prayer (Night Prayer). The length of this prayer is usually 2-3 times as long as the daily prayers. Some Muslims spend the entire night in prayer. |
On the evening of the 27th day of the month, Muslims celebrate the Laylat-al-Qadr (the Night of Power). It is believed that on this night Muhammad first received the revelation of the Holy Quran. And according to the Quran, this is when God determines the course of the world for the following year.
When the fast ends (the first day of the month of Shawwal) it is celebrated for three days in a holiday called Id-al-Fitr (the Feast of Fast Breaking). Gifts are exchanged. Friends and family gather to pray in congregation and for large meals. In some cities fairs are held to celebrate the end of the Fast of Ramadan.

Hace más de 700 años, después de la muerte del Mevlana Mohammed Jalalud-din, su hijo, el Sultán Valad fundó la secta de Mevlana para dar continuidad a las ideas filosóficas de su padre. En un sentido místico, la ceremonia de Mevlana simboliza lo divino, el amor y la pasión, la madurez espiritual y el camino de unificación con la verdad divina.
- Todas las "pequeñas o grandes cosas" son parte de la creación: los átomos y sus elementos, el sistema Solar y sus componentes y tambien la sangre que circula en nuestro cuerpo. La ceremonia de los dervishes en la estación de tren de Sirkeci, (famosa estación de tren del Oriente Express) fueron suspendidos y ahora los dervishes se encuentran en el centro cultural de Hodjapasha donde funcionó un antiguo baño turco, todos los días de la semana excepto Martes y Jueves , a las 19:30 horas. La ceremonia tiene una duración de una hora.
La ceremonia empieza con las lecturas del Corán. Hay una entrada ceremonial del Dervishes en la mezquita. Entonces los Dervishes se quitan su capa externa negra que revela su ropa blanca. Esto simboliza librarse de todo aquello que les conecta con el mundo material. La música tiene una repetición de frenesi y los dervishes giran durante aproximadamente 10 minutos. Esta secuencia se repite por cuatro veces. Cuando giran en pirueta, una mano apunta al cielo y la otra a la tierra, simbolizando las bendiciones del cielo otorgadas a la tierra.

A FORTY YEAR OLD WINE
One day, a neighbor said to the Hodja:
“Have you a wine that is forty years old?”
“Yes I have”, replied the Hodja.
“Can you give me a little”, asked the neighbor.
“If I gave a little to everybody asking for it”, said the Hodja, “It would not be forty years old!”
BALANCE OF THE WORLD
Someone asked:
“Hodja Effendi, why do people go to different directions, when they leave their houses in the morning?”
The Hodja answered without hesitation:
“If all of them would go to the same direction, this would throw off the balance of the world!”
BEAUTIFUL HORSE
One day, when Temur was going hunting he wanted the Hodja to join him. In front of the palace, where the hunting started, they gave him an old, tired horse.
During the hunting suddenly it began to rain. Everybody put their horses to the gallop and ran away. But the Hodja couldn't... As the weather was hot he took off his clothes and put them under him. And so he returned slowly to the palace. When the rain was over he put on his clothes again.
When he arrived at the palace, his clothes were dry and Temur was most astonished.
“We all got wet”, he said. “How is it, that you are still dry?”
“Oh, Sir”, the Hodja replied. “With the help of this horse, I arrived at the palace without getting wet.”
Another hunting trip Temur wanted the horse which was given to the Hodja before. By a great coincidence it again began to rain and Temur got wet. When he came back to the palace he angrily called the Hodja and asked what it meant.
“Oh Sir,”, the Hodja said. “I am very sorry. I forgot to tell you, that you also had to put your clothes under you and then you would not get wet.”
BLACK BOOK
Once upon a time the Hodja was a judge and one day a man came to him.
“Your cow has killed mine!”, he cried.
The Hodja shouted:
“You silly fellow, how can the cow know that it is a crime to kill another cow. Case dismissed!”
“Oh sorry”, said the man. “I said it wrong. My cow has killed yours.”
“Then, this is another problem”, said the Hodja. “We'll open the black book and see what it says.”
BLANKET IS GONE
At midnight the Hodja heard a noise. Two men were struggling outside. The Hodja got out of his bed with a blanket over him and went to the front of his house. He asked them why they were fighting. Without answering, one of them took the blanket that covered the Hodja and they both fled. So the poor Hodja returned to his bed again.
“What were they fighting about?”, asked his wife.
“About our blanket”, said the Hodja. “Now the blanket is gone, so the struggle is over.”
BUSY-BODY
One day, people said to the Hodja:
“Your wife walks from house to house, tell her she mustn't walk so much,”. “Alright”, said the Hodja. “If she comes to our house, I'll tell her.”
CAT AND THE LIVER
After the Hodja got the recipe for liver from his friend, he bought again some liver and because he liked it very much, he wanted to eat it often.
But everytime when he brought livers he couldn't eat it, because his wife said that the cat took the liver and fled away.
One day the Hodja became angry and said:
“Woman, I brought liver! Where is it?”
“Oh”, said his wife. “The silly cat took it and fled away.”
At the same time the cat was in the room. The Hodja caught it, brought a steelyard and weighted the cat. Then he said:
“That is exactly two kilos. And the liver which I brought was also two kilos. Now tell me: If that is the liver where is my cat, if that is the cat, then I want my liver.”
CLEVEREST MAN IN THE WORLD
At the time of the Hodja, some clever and educated men were searching for an intelligent man, who could answer their three questions.
They traveled through the whole world and then came to Akshehir. They asked:
“Who is most intelligent man in this town?”
Of course the people of the town brought the Hodja to the three men and they began to ask.
“First question: Where is the central point of the world?”
The Hodja's donkey was with him. So he pointed to his donkey.
“Where the front legs of my donkey are, there is the middle point of the world.”
“How can you prove that?” asked one of the men.
“If you don't believe, you can measure it”, the Hodja said.
Measuring did not seem a good idea to them, so they went on to the next question.
“How many stars are on the sky?”
The Hodja replied without hesitation:
“As many as the hairs on my donkey's mane.”
The three men laughed.
“If you don't believe it,” said the Hodja. “you can count them.”
The foreigners understood that they couldn't get a correct reply and one of them asked:
“Can you say how many hairs are in your donkey's mane?”
“Oh, yes”, said the Hodja. “There are exactly the same number of hairs as you have in your beard. Now don't tell me, that you don't believe that because I can prove it by pulling one hair from your beard and one from the donkey's mane. When we pull each hair out one after the other, you can see at the end that there are the same number of hairs.”
The three men went back to their country and told everyone that the cleverest man in the world lived in Akshehir.
COW AND THE DONKEY
The Hodja had a little stable and a nice donkey. He hadn't wanted to buy a cow, because his donkey would be disturbed and he hadn't much money neither. But his wife wanted to have a cow and she convinced him at last.
The Hodja couldn't stand against his wife, so he bought a cow and put it in the stable. But the stable was small and they couldn't stay quiet in it. The Hodja who got tired of that said:

“I have no money, but I can give you credit. How much do you want?”
DARKNESS
One day the Hodja lost his ring. He searched and searched, but he couldn't find it. Then he got out the house and began to search the ring on the road.
People passing by asked him:
“Hodja Effendi, what are you doing?”
“I've lost my ring at home, and now I'm searching it.””
“Why don't you search it inside?”
“The house is too dark. I can't see anything, so I'm searching my ring outside!”
DAYS OF A MONTH
In Ramazan, a special month for Moslems, the Hodja began it by putting a stone in a cup, to know which day it was. So, every morning he put a stone into the cup without knowing that one of his friends put a handful of stones in it, to play a trick on him.
A few days later a man asked the Hodja: “Hodja Effendi, how many days have passed since we started Ramazan?”,
The Hodja told him to wait for a minute, ran to his cup, counted the stones, came back and said:
“Up to today 45 days of Ramazan have passed.”
“But Hodja”, said the man. “There are only 30 days in a month. How is it possible?”
“Oh, be satisfied with that”, said the Hodja. “If you had counted the stones in the cup you would have seen, that it is the hundredandtwentieth day of Ramazan.”
DUCK SOUP
The Hodja had nothing to eat in his house. So he went for a walk beside the lake of Akshehir. Ducks were swimming in the lake. Then he began to drink the water of the lake.
“Hodja Effendi, what are you doing there?” asked a man.
“I am drinking duck soup”, he replied.
EASY METHOD OF THE BIRTH
In the village a woman was giving birth to her child and as it was a difficult birth the relatives waited for many hours. So they sent for the Hodja.
He came, listened to their story and went away. He returned in a few moments with a toy that made a squeaking sound. They asked him why and he said:
“Because the child will hear the “voice” of the toy and will very quickly come out to play.”
